For Chef Mark Best’s Melbourne restaurant embedded in the Sofitel forecourt, ‘Bistronomy’ was the catch cry, creating accessible food inspired by Paris’ bistro scene. The varied spaces were to encourage people to visit several times a week across the bar, dining room or terrace. The areas came together seamlessly with subtle historic references in the light filled rooms; with charcoal, stainless steel and grey herringbone banquette fabric, all oblique modern references to the 1960s and 70s French bistro.
